Vegan Meals I Eat Every Week (lazy & healthy)

Hi there! Today’s video features lazy but healthy vegan meals I like to eat (pretty much) every week. We’re going back to basics with this one – my go to oatmeal recipe is in there, yummy tofu scrambles, potato bowls, smoothie bowls and more! What’s a vegan meal you like to eat on a weekly basis?

(all these are single servings, apart from scramble #2 that one could be enough for 1-2)

#1 Berry Pumpkin Seed Muesli

⅓ cup + 1 tbsp oats (33g + 1 tbsp)
¼ cup whole wheat cereal (12g)
1 tbsp pumpkin seeds
handful of dried cranberries
handful of raspberries
non dairy milk

almond chocolate sauce:
1 heaping tbsp almond butter
2 tsp unsweetened cocoa powder
1-2 tsp liquid sweetener of choice
1 ½ tbsp non dairy milk, or more if needed

#2 Tofu Scramble

Version 1:

1 block firm plain tofu (200g) = (7.05oz)
1 ½ tbsp cornstarch
generous pinch of salt
½ tsp turmeric
black pepper, dried herbs
1 tbsp nutritional yeast
2 tbsp plain soy yogurt
1 tbsp white wine vinegar
1 small onion
oil for the pan

optional: 1/4 tsp kala namak, makes it taste more like egg
someone in the comments recommends to “add the kala namak AFTER cooking the tofu, otherwise it’ll just taste salty” 🙂

(Also bread of choice, spring onion for serving, vegan cream cheese)

Version 2:

1 block of silken tofu (400g) (14oz)
oil for the pan
1 spring onion or regular onion
handful of mushrooms
1 tbsp soy sauce
2 tsp nutritional yeast
generous pinch of salt
½ tsp turmeric
black pepper, dried herbs
optional: 1/4 tsp kala namak, makes it taste more like egg, added after cooking
1-2 handfuls of fresh spinach
2 tortillas, vegan cream cheese, hot sauce, sunflower seeds

#3 Lemon and Blueberry Oatmeal

½ cup oats, small cut (45g)
generous pinch of salt
2 tsp flax seeds, semi ground
zest of half a lemon
1 cup non dairy milk (250ml)
frozen blueberries, shredded coconut and agave syrup for the top

#4 Spicy Avocado and Vegan Cream Cheese Toasts with Almond Butter Salad

Almond Salad Dressing:
1 tbsp almond butter
1 tsp soy sauce
1 tbsp white wine vinegar
2 tsp non dairy milk
spices of choice
Also salad ingredients: lettuce, carrots, sunflower seeds, corn etc.

for the toasts:
2 pieces of bread
vegan cream cheese
lemon juice
sesame seeds
hot sauce

#5 Blueberry Smoothie Bowl

1-2 frozen bananas
1 ½ cups frozen blueberries (150g)
1 tbsp oats
¼ tsp cinnamon
1 tbsp peanut butter
1 tsp hemp powder or hemp seeds or chia or ground flax
a splash of orange juice
toppings of choice: soy yogurt, berries, muesli …

#6 Lazy Hummus Potato Bowl

2 – 3 medium sized potatoes or however many you want
brown lentils
flavoured tofu
sesame seeds

for the sauce:

1 heaping tbsp hummus
hot sauce, like ¾ tsp or how ever much you wanna add
1 tbsp nutritional yeast
1 tbsp white wine vinegar
2-3 tsp non dairy milk
salt, pepper to taste
