Today I’m sharing my vegan keto n’oatmeal recipe! It’s quick, easy and won’t give you a sugar crash. Recipe is for one serving, but feel free to double or triple the recipe if you’re meal prepping for the week. You know how much I love a meal prep moment ; ) You can eat this hot or cold. The chia seeds give it a chia seed pudding vibe, so it tastes great cold too.
N’oatmeal ingredients –
2 TBS flaxseed
2 TBS chia seed
2 TBS shredded coconut
2 TBS Lankanto sweetener https://amzn.to/2mcUleK
1/2 cup hot water
1/2 cup coconut milk
1/2 tsp vanilla extract
Add everything except the vanilla extract to a small pot and heat over medium low heat for about 5 minutes until thickened. It will thicken even more after it’s cooled a bit. After n’oatmeal is finished cooking, remove from heat and add vanilla extract and stir. Add desired toppings and enjoy!
